Boston Baked Beans
from Laurel's Kitchen, page 309
- 1 onion, chopped;
- 1/3 c molasses;
- 1.5 tb oil;
- 3 c cooked navy beans and liquid;
- 1/3 c molasses;
- 2-4 tb shoyu, to taste;
- 1 tb prepared mustard.
Preheat oven to 325 ° F.
Sauté onion in oil. Mix all ingredients. Place in a greased, shallow glass or ceramic casserole. Bake, covered, for 45 minutes.
Makes 6 servings (about 3 1/3 cups).
We add garlic (in the sauté), cumin and coriander. We usually double it to fit in the big French White casserole. Last made: May 26/2004.
